Just got the radiator hoses, belt, and cooling system (anti-freeze) replaced. Scored some great discounts too with the mechanic since we've been going there for so long. Made some Eggplant Parmesan today. Thin sliced and breaded eggplant, layered with little sauce, ricotta, and a mix between mozzarella and smoked mozzarella. The smoked mozzarella was my idea, and the pork store had it fresh this morning so I figured I'd try it since I never had it. I personally prefer my Parmesan dishes with less sauce, and this was one of the best ways I've ever had it. Here's my first attempt at a food-porn shot.
