Fancied a burger tonight. I had some angus mince in the fridge so i whipped up an angus burger with wholegrain mustard, pickled gherkins, peppered chedder cheese, bacon, and a sesame bun with a side of sweet potato fries, lightly seasoned with chilli and lime. And a scallion mayo dip.

The simple life. :)

Made some Eggplant Parmesan today. Thin sliced and breaded eggplant, layered with little sauce, ricotta, and a mix between mozzarella and smoked mozzarella.

The smoked mozzarella was my idea, and the pork store had it fresh this morning so I figured I'd try it since I never had it.

I personally prefer my Parmesan dishes with less sauce, and this was one of the best ways I've ever had it.

When we make a batch of chili, it's often accompanied by either vanilla cornbread or jalapeno cornbread. Yum!!

Some of the best eggplant parm from a nice Italian place last night. Capellini served along side. Nice breadbasket with oil and some garlic knots. Free plate of bruschetta and a simple salad.

Wish I could go back again today.

^Yes, vanilla cornbread, it goes unexpectedly well with a spicy chili.

Speaking of vanilla, I just used part of a vanilla pod to make pudding. I made brownies earlier, but for some reason they completely fell apart into crumbs...so now they're going on top of vanilla pudding. That'll show 'em.
